Authentic Mexican Cooking Vs. Tex-Mex And Mexican American

One of the main differences between authentic Mexican and Mexican-American is that Mexican-American uses more ground beef and cheddar or yellow cheese than does authentic Mexican. In Mexico, boiled and shredded beef and other meats, as well as white asadero cheese is used. Another main difference between authentic Mexican and Mexican-American is the way enchiladas are prepared. In the US, tortillas are covered with enchilada sauce and filled with large quantities of ground beef and cheese, then placed in the oven for baking. In Mexico, tortillas are dipped in enchilada sauce then fried in oil and filled with a small amount of meat and cheese for a garnish.

Tex-Mex is often referred to as dishes using large amounts of beef and cheese along with a gravy style enchilada sauce. Puffy tacos are something you won’t find anywhere else in the US or Mexico and Texas style salsa is made with jalapeno chilies, whereas Mexican salsa is made with tomatoes, tomatillos and other types of chili.

New Mexico and Arizona also add their style of cooking to the broad term Mexican-American. New Mexican’s incorporated many of their dishes with the Pueblo Indians and the Spaniards. Treats like sopaipillas are unique to New Mexico. Sopaipillas are deep fried flour tortillas filled with honey or sometimes seasoned meat. New Mexico also uses its own style chili sauces made from chilies grown in their state. Arizona brought us popular Mexican-American dishes like burritos and chimichangas which were not found in other areas until recently.

It’s interesting to note that the most popular Mexican food in the US, such as tacos, enchiladas and tamales, are staples and regarded as a snack or light meal in Mexico. They are as hamburgers and hot dogs are to people in the US.

Low fat, Low Calorie Mexican Dishes

Fat and fatty recipes were introduced into Mexico when the Spaniards brought over oil and other fatty foods. Many authentic Mexican recipes use little cheese, small amounts of meat, if any, and many of their sauces are made from tomatillos and tomatoes. Mexicans are also famous for their seafood recipes, many of which are also low fat.  Many of the dishes you see in “Mexican” restaurants are variations of authentic Mexican cooking adjusted and adapted to meet a more American style of taste. So, if you happen to come across a truly authentic Mexican restaurant, you might be surprised at the size of the entrée and the fact that it doesn’t contain a large amount of meat or cheese.

Mexican, really?

I’m a Mexican expatriate living in the US for the past 7+ years. Born and raised in northern Mexico, food was an integral part of my upbringing. Recipes are passed from generation to generation and 100-year-old recipes are still part of everyday cooking in Mexico.

Through my teenager and early adult years I developed a passion for cooking. I used to devour cookbooks and religiously watched American cooking shows on satellite. So coming to the US in 2001, I had a solid foundation in Mexican food and a decent understanding of American food….Well, at least I thought I had.

Besides the first Thanksgiving night I spent in the US when I went out at 6pm to “grab a bite to eat” (and of course ended up having a nice junk food meal at home), the biggest shock for me was finding “Mexican” food all over the place…Awesome!!! Restaurants carry a variety of “Mexican” dishes; Grocery stores have a “Mexican” aisle…This is not that bad, I thought. So I decided to give one of these “Mexican” places a try, hoping to cure a bit of my home-sickness. So I got there, and although the decoration of the place made me feel at Dora the Explorer’s home, I stayed on track and decided to order.

So I thought, I’d pick something truly authentic that would take me back home. So I picked the Enchiladas. There’s nothing more satisfying to me like a plate of oil-dipped, cheese-filled corn tortillas topped with even more cheese. Long story short, the plate I got DID in fact take me back home….screaming for my mommy!!! When I got my plate I honestly thought I’d gotten the wrong order. All I could see was some kind of melted yellow cheese on top of a sea of a suspicious red sauce. I asked my server if these were the enchiladas and unfortunately, he confirmed it.

So here I am, in front of a mass of lettuce, melted cheese mixed with red sauce, sour cream and who knows what else under it. And unfortunately it tasted exactly as it looked. Not bad at all, just a lot of different flavors going on and not a drop of Mexican flavor to it. Now that I’m a little more Americanized, I can describe to you what the dish tasted like: Flour tortillas filled with chili, drenched in ketchup and topped with Velveeta. Again, it was not bad, just not what I expected.

So from that day on, I’ve been on my little mission of trying to educate “gringos” about the true essence of Authentic Mexican Food. I can guarantee you’ll be surprised to know most of your Mexican favorite dishes are not that authentic. Would you believe Margaritas are not popular at all amongst Mexican people? Other than American teenagers getting loaded during Spring Break in Cancun and the regular American tourist, Mexicans do not drink that stuff. A similar thing happens with the so-called “Cinco de Mayo” celebration. Did you know most Mexican companies do not even observe this holiday? Government agencies and schools do, but it’s not an official National Holiday. And really, there’s not a whole lot of celebrating going on either. This holiday is in fact much bigger here in the US that it is in Mexico….Go figure.

So, this is the kind of thing that makes me go mental. I know, it’s only food, but it’s the food I grew up with; the food of my ancestors, and the fact that there are self-proclaimed Mexican Food authorities and places out there making a living on it, just makes me cringe.

The Truth About Lloret De Mar! Its a Little Taste of Paradise

You can reach Lloret de Mar on the Costa Brava by flying to Barcelona or Gerona airports. Gerona is about 40k from the coast and takes about 40 minutes to get there but Barcelona is around 90k away and the transfer takes about an hour to Lloret.

The main coastal resorts near Lloret de Mar are Roses, Tossa de Mar, Santa Susana, Calella, Pineda, Malgrat and Blanes.

What are the hotels like? There is every kind of hotel and apartment complex you could imagine in Lloret. All-inclusive hotels, self-catering apartments, a hostel, small tent city and probably many other places as well.

We stayed at the Blau apartments half way up Lloret high street and, the hotel Rosamar, which is on the opposite side of all the shops and narrow streets, near the beach.

Our room at the Blau was quite nice, fridge and TV, balcony and good-sized bathroom but rather noisy though being above the high street. The staff at the apartments not too friendly and the facilities substandard. There is a tiny roof pool full of kids and the laundry facilities consist of a washing machine in a room, which was always flooded.

A major plus was having a supermarket right next door. The supermarket had everything we needed as we went self-catering, and what we couldn’t get we only had to take a short walk up the high street.

The hotel Rosamar was quite different though. The room was very basic and the whole ambiance of the hotel was depressing. My wife and I chose to go half board this time, thinking we would save on washing up, cleaning the apartment etc.

Bad mistake! The food was terrible and very poor quality for the whole two weeks but because it was so cheap to eat out, we did have many evening meals out and even some breakfasts we skipped and went to our favourite pizza restaurant for brunch near the hotel. Sat watching over the beach, sun beating down, large jug of sangria, aaah yes, paradise in Lloret.

Anyway, the Rosamar had a nice big pool, plenty of umbrellas and sun beds, Jacuzzi, gym, sauna and activities for the kids. The evening entertainment in the hotel was varied and lively. We met a great couple called Graham and Rosemary, we spent many nights with them sat in the corner of the entertainment lounge drinking and talking until the small hours.

How about the nightlife? The nightlife of Lloret is wild! There are plenty of pubs and clubs run by English people, the most popular probably being The Queen Vic, Texas and The Seven Seas. There was a great pub called the white Horse but this is now closed down.

You can even find a few theme bars in Lloret. A rock bar, disco place, clubs open until 4 or 5 in the morning, Rockafellas is one and don’t go to the Flamingo hotel unless you want to see a little more flesh than you normally would in a public place. There are burger places and kebab houses open all night long not too mention all the fast food restaurants open all the time.

And the daylife…? The day life is quite relaxed. The Costa Brava might have a reputation for being the wild and rugged coast of Spain, but remember, this is Spain and in Spain everything goes slow and no one misses an afternoon siesta. If you have kids, take them to the Water Park at Lloret, it is fantastic and you could easily spend a whole day there. There is a marine life centre, and there are some fantastic bays and beaches to visit all around Lloret.

Best way to reach all the bays and coves is by very reasonably priced water taxis. You won’t regret your little trips up and down the coast, the coastline is amazing! Tossa de Mar, Santa Susana, Santa Christina, Blanes and a few others. Our favourite? Santa Christina, there can’t be many places in the world where you have a sandy beach, restaurant and bar and fast food all in one place, with not too many people? Sounds to good to be true, but its not!

As you cruise up and down the coast you will see old castles, rugged cliffs and churches you can see for miles. They have the glass bottom boats so you can visit the uninhabited islands off the coast where there is plenty of marine life to watch under the boat, fish, octopus etc… or you can sit on the top deck, see everything, and have an ice cream or soft drink.

If you find yourself with a spare morning or afternoon, the old church right in the centre of Lloret is beautiful. See if you can get inside. They will not let you take pictures but it is worth the hassle of talking to the person in charge to get a peep inside.

We took a trip on the little train that does the rounds on the streets. Thinking it was a way to kill an hour and would be a good chance for an afternoon kip, we were pleasantly surprised. After about 5 minutes we were heading out of Lloret and up into the hills. The little train carried us past stunning villas and the view from the top of the hill was breathtaking. There is a man who takes a camcorder and you can buy a video of the whole experience, great souvenir to bring home.

If you want to get out of Lloret for a day, try, Montserrat, Andorra, Barcelona, Vic and one or two other places away from Lloret but near enough away for a day trip. I recommend all the above, especially Barcelona. If you go there, visit Goudy’s church, the football stadium and the kids will love the zoo. Whilst you have lunch at the café in the zoo, you can watch the giraffes up close and very personal.

At the bottom of Lloret high street there is a children’s carousel and up the top of the high street there is an adult’s carousel. You could probably take the kids on both but the one at the top of the street is double decked and has a very cozy Cinderella’s coach.

Putting Wall Hangings As a Start For Your Room Makeover

We always want out homes to look at its best. This is often the reason why many people invest on redesigning their interiors. No wonder the interior designing industry has been booming for years because people are ready to pay just to make their homes lovelier and homier.

Hello From Mexico City – A Relaxing Evening In Coyoacán

Last night after our big first discovery of Mexico City I had a couple of hours of rest before Vanessa and her mom took me to one of the most picturesque areas in the city: Coyoacán, an area located south of the downtown core. The traffic to get there, as you can imagine, was absolutely incredible – 4 lane streets with no markings, people squeezing in and out between cars as they pleased, trucks cutting in right in front of us with just millimeters to spare…

Fortunately we made it without a scrape and we finally got to our destination: the well-preserved colonial area of “Coyoacán” whose name literally means “Place of the Coyotes”. Sure enough, in the center of the Jardín Centenario there is a big fountain featuring two coyotes.

Coyoacán is one of the most historic areas of Mexico City and almost 5 centuries ago, Hernán Cortés, Mexico’s conquistador, and his Indian mistress “La Malinche” spent a lot of time here. Today the whole area is full of cafés, restaurants and bars, and there are a variety of crafts and food markets to be visited here.

Three famous personalities had their homes here and all three buildings have been turned into museums. The house of Mexico’s most famous muralist, Diego Rivera, has been turned into a museum. His one-time wife, Frida Kahlo, also lived in Coyoacán and spent most of her life in this house and eventually died here. Her ex-husband Rivera donated the house to the public in 1955, shortly after Frida’s death.

Leon Trotsky, the Russian revolutionary, also lived in a house in the Coyoacán area after he had lived with Diego Rivera and Frida Kahlo. Trotsky invested great efforts to safety-proof his house to protect him from Stalin’s assassins, yet in May of 1940 his house was attacked and machine-gunned for twenty minutes. Then 3 months later Trotsky was fatally wounded after having been stabbed with an ice pick. So Coyoacán has some pretty interesting historic tidbits to offer.

We sat down in a quaint café next to the Jardín Centenario and had some snacks. I enjoyed a crepe with a variety of syrups such as strawberry, mango and blueberry. Vanessa’s best friend, whom she has known since they were 12 years old, and her boyfriend, a sociologist, joined us. There was lots of noise: live music coming at us from behind us in the restaurant, from the restaurant next to us and from the street musicians that would stop right in front of our table.

Social sciences always hold great interest for me, so I took advantage of the opportunity of talking with a sociologist. We had a very interesting conversation about how tough it is to find a job in his field under a government that has a “neoliberal” agenda. According to him, the social sciences are not funded very well in Mexico, but a lot of funding is dedicated to private universities for engineering and science projects. He also gave me a quick overview of Mexico’s political parties, very interesting since national elections are coming up on July 2 of this year.

After our animated discussion we returned to rest up for another big day of discoveries tomorrow.

Matching Your Target Market – A Lesson From Mexican Entrepreneurs

How to reach your peeps is just about always on my mind – it comes with the territory of being a marketing therapist. So here I was, two days ago, lounging around on the public beach in Puerto Vallarta. And I ended up, no big surprise, watching the vendors who sell up and down the beach. It is a great case study of how to figure out what to sell to a specific target market.

In the space of two hours we were visited by quite a number of beach vendors. Here’s a list of the items we were offered:
Cooked skewered shrimp, topped off by one of the limes hooked onto a separate skewer.

Heavy blankets in various colors that could be used on the beach or as a rug at home.

Brightly colored large pitchers that looked like ceramic but were actually wood.

Toys and gum from a basket.

Tuba-tuba, which is a chilled coconut drink served into a cup from a huge hollowed out double gourd.

Lace shawls.

All sorts of jewelry – silver, shells, beaded.

Elaborately carved cold fresh fruit, your choice, from a head-balanced platter.

Music from a 3-group band, complete with voice and instruments (including a bass fiddle)

Music from a two-person steel band percussion group, a 4-foot long instrument that unfolded and sat on a table, complete with sound system (battery operated).

Sunglasses

Bracelets hand-woven with your name on it

Straw hats

Large silver and mother of pearl fish which are jointed throughout the body so that the fish “swim” when wiggled.

I’m not quite sure this is everything, but the list covers most of the vendors we saw drifting by.

OK, let’s say that your job is to be a beach vendor on a warm Mexican beach. Some of your potential customers will be sitting in chairs under palabas, some will be already sitting in restaurants along the beach. Your job is to sell as much as you can from what you are offering. Can you name the top two things to sell? Can you name the bottom two things to sell? Remember that your target market is beach goers, some of whom are foreign, some of whom are locals, all of whom are on the beach, and some of whom are eating or drinking in restaurants. What are your picks for the two best things to sell to this market, and the two worst things?

Keep in mind, too, that you have to carry what you sell, walking in the sand, up and down the beach for miles and hours a day.

My two picks for the worst? The brightly colored large pitchers, which look like ceramic but are made of wood. They are awkward to carry, the vendor can’t actually carry more than about 4 at a time, and who on the beach wants one of these pitchers right then? Even if a potential customer was not on the beach, the pitchers are too large to easily carry home if you are a foreigner, and more than likely the locals don’t even use them as they don’t hold liquid. I think the guy who chose to sell the pitchers needs a few marketing lessons!

My second choice for the worst to sell, although a close race, is the steel band percussion. The instrument was huge to carry (requiring both persons) up and down the sand, hard to set up, and had to be hauled along with a fold-out table and the battery-operated sound system. That’s a lot to set up and take down for just one song, even if you had good luck selling the music to a lot of people. Plus, many people besides the one person who paid for the music can hear it, so you aren’t exactly going to sell music to the next person, are you? And frankly, most beach goers are busy sleeping, reading, riding the waves, or walking up and down the beach…..they don’t really have hearing live music on their minds.

My two choices for the best things to sell? Straw hats, because lots of beachgoers get to the beach thinking they won’t need a hat. But when they get there, they realize they do! The hats are relatively light to carry (I saw one vendor with a stack of about 50 straw hats on his head). As I watched him sell to someone on the sand, I realized he also had an upsell! He took leather braided bands out of his pocket and offered to add one to the hat for just a few more pesos. Smart guy – beach goers need hats, and they didn’t wear him out to carry.

My second choice for the best thing to sell is the cold, fresh fruit. It both gives a beach person something to eat and quenches thirst. It’s colorful and appetizing, and very noticable since most of the fresh fruit vendors carry the trays on their heads. It’s not expensive, it’s healthy, and even the kids seemed to like it. It’s probably one of the easiest things to carry on the beach, and the tray actually gives the vendor a little shade as he walks.

The point to this is that there are many things to consider when you are deciding what and how to sell to your target market. You do have to consider the pound of flesh it takes out of you, the costs you have in obtaining the product, and, of course, what you believe your market will want.

This doesn’t apply to the beach vendors as much as it does to you, but one way to quit guessing what your market wants is to ask them! Use a brief survey, talk to a subset of your prospects now and then, keep your ear to the ground. You’ll be more apt to design something that is wanted and needed than if you just put something on your back and start walking.

Mudras & Hand Symbolism: Hand Symbolism & Beliefs Part 1

Human hands have never lost their fascination to our ancient forefathers, and even now in contemporary times, the novel roles that hands play in the humanities with their dexterity and grace never cease to amaze us. The wondrous execution of a Chopin piece, or an objet d’ art fabricated carefully by a master hand–they constantly evoke a sense of joy and wonder within us. The Spirit within us responds positively to the beauty, the harmony, and the symmetry of sound and form as manifested by Nature and human hands.God’s gift to man is the freedom of choice and the will to implement that choice.

On the physical plane, the hands are naturally the instruments of that will and divine blessing and have come to symbolize Man, or Adam; for only beings on the evolutionary level of man are given the prerogative to determine their own fate. It is said that not even angels have this freedom to choose, for their nature compels them to abide by the divine law. Man on the other hand, through choice, learns what it means to align himself with, or to disobey Cosmic laws. Man learns the consequences of his actions, and wise is he who takes responsibility for them. Through choice man succumbs to his lower nature and builds pandemonium in his mind and heart or he may give ear to the prompting of his divine Self and form the New Jerusalem–the new abode of peace in the lower aspects of his microcosm that this condition may become ingrained in his character and nature. By choosing the latter, the teaching of the Master Jesus–”Neither shall they say, lo here! or, lo there! for, behold, the kingdom of God is within you” (Luke:17:21)–shall come to pass.

God, Nature, and the higher worlds communicate with Man in various ways–through dreams, through the intuitive and psychic faculties, through symbiotic energy exchange, signs, omens, and especially symbols. Basically, symbols may be classified as natural and artificial. Natural symbols are found in nature. Artificial symbols are those that we invent ourselves and assign certain basic meanings to them. Certain occult symbols–of the natural and artificial types–are known to Adepts and the multitude of beings in the spirit world. Most of these symbols have their origin in archetypal realms in the mental planes. Utilizing these in metaphysical or magickal ceremonies, rites and rituals, facilitates communication and the synergy between habitants of worlds and realms.

Objects of nature are outward symbols of inner realities within our psyche. Understand one and we will eventually understand the other. Master the inner realities and the outward symbols assume a congenial expression to correspond with the inner psychological condition. Since our hands are related to the will aspect of the Spirit, empowering one will have its effects on the other. We will not delve too deeply into this for it will take us too far into the Magical Tradition and beyond the subject matter of this article. Suffice to say that contrary to the understanding of most metaphysical students, Masterhood or adeptship has very little to do with psychicism and much to do with the magick of the divine will within man–the will to love, the will to serve, the will to sacrifice, the will to self-forgetfulness, the will to selflessness, the will to give, the will to create, the will to surrender, the will to be pure, the will to forgive, the will to be open-minded, the will not to be judgmental, etc.–most important of all, the will to implement the promptings of the Divine Spark within the microcosm.

Our hands should not be undervalued. Without them we are less effective in carrying-out our mission in life. In the higher worlds we express our creativity through thought–mind-generated sounds, colors, and light. All of these occur instantaneously with thought as the creator. Because of the density of physical matter and the factor of time, something other than the above means are required to fashion things in concordance to our desire and thus assist us to fulfill our purpose for being incarnated in the three-dimensional realm. Our hands are a projection of this need. In the higher worlds, our subtle bodies in their primitive state did not possess hands, and even though now that the astral and etheric bodies have evolved and assumed the human form, the incorporeal limbs may be dispensed with for they are not essential for us to function in the higher dimensions.

Having stated the importance of hands here in the physical plane, let us now inquire briefly into hand esotericism, symbolism, signs and the various beliefs regarding them. Though our treatment of the subject here leaves much to be desired, the metaphysical student will find many things here of great interest and they would certainly be stimulated to research further.

Because of their importance, many beliefs grew concerning the hands. Countless symbols and signs were created using the hands to convey knowledge and information to those who understood the underlying keys of the secret teachings taught in esoteric schools.

In religion, hands symbolize the divine presence, influence and power. In Catholicism, the power and influence of God is often portrayed in medieval paintings and murals as an almighty hand issuing from the clouds to convey something of spiritual importance to saints and prophets. Actually, the “All-Powerful Hand” has its origin in ancient Egypt. The monotheistic Pharaoh, Akhenaton (1379-1362 B.C.) and Queen Nefertiti of the 18th dynasty are often depicted in sculpture relief as receiving energy from Aton, who is represented by a sun-disk. This can be seen in the tombs at Tel-el-Amarna. Rays of the sun-disk are portrayed as elongated arms terminating in hands reaching out to the royal couple and bestowing upon them the life-force. The mystical Qabbalistic tradition of Judaism assigns the human hand as the symbol of the letter Yod (y). Having the numerical value of ten, which relates to the ten fingers, the letter Yod is recurrently depicted in esoteric art as “rain drops” showering from heaven. Example of these may be seen in the Rider-Waite Tarot deck.

Modern Catholics present the hand of Jesus as the Hand of Power or “Mano Poderosa.” In the depiction of the crucified hand, all of the fingers are extended with various saints standing upon the digits. We present a version of the hand here with a scholar’s commentary:

“The image is of a huge wounded (but not bleeding) right hand, which points up through clouds, cut palm toward us. The lines in the palm are shown, and it looks like the head line is cut. The fingers are all of eerily uniform length, with a long thin thumb. Small, disembodied, winged cherub-heads float in the sky above the hand.

“To the left and right of the hand are four kneeling female angels who gaze upward and bear the tools of the crucifixion. Of the two on the left, one holds a bowl to catch Jesus’ blood; the other holds a spear and vinegar sop in one hand and hammer and nails in the other. Of the two on the right, one holds a cross and the other a crown of thorns.

“Atop clouds on the little finger stands an older male saint with a book. The ring finger’s clouds hold a female saint; the middle finger’s, a younger male saint with a white lily; the forefinger’s, the Virgin Mary; and the deformed thumb’s clouds bear the toddler Jesus holding a globe in his right hand and raising his left.”

From the above we may surmise that not only are hands the symbol of Man, they are also the symbol of divinity, for the sacred hand of the Divine One have its influence upon the mundane affairs of humanity when men have gone too far astray from the path of Truth and righteousness. Scriptures are replete with stories of divine intervention or action with materialized hands as a media of information conveyance or operation. Not only did the hand of God “inscribe” the Ten Commandments upon the stone tablets prepared by Moses, it also warned Belshazzar of his impending doom–a spirit hand materialized and wrote on the wall “Mene, Mene Tekel, U-pharsin” (Daniel 5: 24-25). From a metaphysical point of view, this is not unusual. Such manifestations are actually the work of what is called in occultism, “Invisible Helpers.” These are initiates with occult and paranormal abilities working on behalf of humanity. They work on the higher dimensions in their nightly excursions through “astral projection.” Some of the higher initiates have the ability to materialize their hands or other parts of their body so that they may function directly on the physical sphere aiding those here who are in dire distress or as in the case above, as a warning to arrogant, tyrannical rulers.

The ancients attached special occult significance to every part of the human body. The symbolism of the human hand alone may fill several volumes. Symbols may signify abstract or concrete concepts, imaginative or real events, natural or “supernatural” phenomena, spiritual or material principles. In what we have found, the ancient sages and philosophers made used of the hands to portray and symbolize many things of worth to the evolving soul. They taught many things using the hands as similitude, allegories, analogies, and examples.

The left and right hands were often represented for the many polarities that we find and experience in life. For instance, hot/cold, high/low, darkness/light, etc. The left hand was often associated with the negative aspects of life, the right with the positive. In the Christian scriptures the Master Jesus instructed us to prevent the left hand from knowing what the right hand is doing; or in other words to be detached from the good that we do without craving for rewards. Jesus’ analogy of the hand, though, has various levels of meaning other than the one cited above.

The ancient sages observed that generally, the right hand was the active one in comparison with the left. Whole philosophies grew from this simple consideration alone. The right hand is electric and is associated with activity; the left hand is magnetic and related to passivity. Gaskell explains this in another way, he says that hands are a,

“symbol of the directive principle of activity either outgoing (right) or incoming (left). The positive and negative aspects of Divine action in the soul.”

Hands are a prominent feature in Judeo-Christian symbolism. In Judaic mysticism, the ten fingers of the hand represent the Ten Commandments of the spiritual law just as the ten toes of the feet represent the Ten Commandments of the physical law. In Esoteric Christianity, the thumb with its three phalanges symbolizes the threefold divinity or the Holy Trinity–the Father, Son, and the Holy Spirit, or the creative, preservative and destructive aspects of God, from the point of view of Hinduism. Since most religions and philosophies have their trinities what applies in Christianity regarding its symbolism likewise applies to the rest as well. We might add that hands raised upward as in prayer, is symbolic of one’s aspirations towards the spiritual life.

According to Christian Qaballistic thought, the fingers signify the four elements and the 3 phalanges of each finger the divisions of the elements: cardinal, fixed, and mutable. The 12 phalanges of the fingers of each hand when brought together represent the 24 Elders. The 6 phalanges of the thumb in this context signify the six days of creation.

In hand esotericism, the thumb is regarded as the king. Hindu metaphysics teaches that the thumb signifies the Paramatma, or the spark of the Universal Soul within the microcosm, and the rest of the fingers symbolizing the other major components of the microcosm.

Anthropologists consider the development of the thumb as a vital evolutionary step in the perfection of man’s anatomy. The thumb is to the hand what the hand is to the brain. It is the function of the thumb in hand mechanics that allows for cultural and technological development. Classical Romans and Greeks regarded the thumb as sacred to Venus or Aphrodite, attributing to it a phallic significance. Thus, it came to symbolize fertility. The traditional Javanese of Indonesia would never point with the forefinger as it is considered impolite to do so (the writer found this rather amusing as a child); the thumb is used instead thus implicitly revealing its sacred and royal nature.

The thumb is all-important in palmistry, especially in Chinese cheiromancy. According to Oriental palmists, with the thumb alone it is possible to tell the predisposition of a person, his character, future, and state of health. The quality of a subject’s chi, or energy is revealed by the size, color, and other characteristics of the thumb.

The dimension of the thumb is an indicator of a person’s will-expression. A large thumb reveals great strength of character and practicality; in contrast, a small thumb denotes weakness, and lack of willpower. The three segments of the thumb disclose certain qualities. The size of the first phalange or top segment shows whether a subject has good willpower, personal determination and other leadership qualities; the second or middle phalange, shows logic, judgement and reason; the third segment, which includes the “ball of the thumb,” called “the Mount of Venus” in palmistry, shows the strength of a subject’s passion and ability to love. One’s karmic potential may be seen in the thumb as well as the state of one’s relationship to the environmental surroundings. The thumb is a symbol of power and as such it is the one used in anointing rites in the Christian churches.

Habitually hiding the thumb in a closed fist indicates a defensive, introverted, disturbed and insecure person. Sucking the thumb is an infantile gesture. Psychologically speaking, the thumb is related to the superconsciousness.

Apart from the thumb, in palmistry, the fingers signify various strength or weakness of one’s character according to their size and shape. Generally, long fingers belong to the philosopher and the intuitive person. It also shows that the subject is painstaking and loves detail. Fingers that are excessive in length indicate cowardice, cruelty, and a servile attitude. “Spider-fingers,” or hands with extra-long fingers and with amazing flexibility is the condition known as “arachnodactyly,” or the “Marfan syndrome” which was named after the French paediatrician, Antonin Marfan (d.1896). Such fingers are possible signs of various diseases present in the physical body such as tuberculosis, paralysis, and cardiac problems. Short fingers in contrast to long ones reveal alertness, impatience, and bluntness.

Fingers with spatulate tips indicate practicality and realistic attitudes. Individuals with square tips love system, routine, and regularity. Conic, or tapering tips shows impulsiveness, idealism, intuition, and the love of art.

The index finger or forefinger was regarded as venomous in bygone days. Even in present times it is rude to point especially with this finger. When using the japa mala, tasbih, or rosary to count beads while chanting mantras and prayers, the forefinger should never be used for it is normally applied for mundane purposes and therefore, not considered sacred. The planet Jupiter is represented by this index finger. Psychologically, it is related to the conscious mind.

The middle finger is known by various names: medius, digitus impudictus (immodest finger), digitus obscenus (obscene finger), digitus infamis (disreputable finger), and fools’s finger. It is a finger normally not used for wearing rings and is the finger of the planet Saturn. When extended solitarily while the other fingers folded, the middle finger represents the phallus, like the thumb. The folded fingers in this pose represent the testicles. It is often regarded as an obscene gesture. This finger of Saturn symbolizes the borderline state between consciousness and the unconsciousness.

The ring finger (anularis) is often called medio proximus (next to the middle) and also digitus medicus, “physician’s finger”. In past ages it was believed to be the healing finger and was used for various medical purposes. Wounds were supposed to heal quickly when stroked by this finger. Apothecaries of medieval days used the ring finger to mix their potions, and ointments were rubbed on the skin using it. Rings were especially used on this finger thus giving it its name. Apollo, or the Sun is the ruling deity of the ring finger. This digit represents the emotions.

The little finger, otherwise known as the “ear finger,” is related to one’s libido, one’s sexual force. Though a convenient instrument to clean one’s ear with, it was named “ear finger” because it had the power to stimulate one’s psychic sense of hearing by its insertion into the ear-canal in conjunction with chanting, breathing and visualization exercises. This was especially practiced by the Druids and those connected with the Mystery Schools. In seances, the little finger is used as a point of contact between sitters, forming a vortex of energy among them. The little finger represents the planet Mercury and the unconsciousness.

According to Chinese palmistry, the three phalanges of the fingers relate to three animalistic qualities. The first phalange closes to the palm represents greed; the middle phalange, hatred; the phalange at the uppermost, ignorance. In pictorial terms, these three vices are symbolized by the cock, the snake, and the pig. The spiritual opposites and antidotes to these negative qualities as taught in Taoist philosophy are non-attachment, wisdom, and compassion.

The elements are represented by the thumb and fingers. In Chinese cheiromancy, the thumb represents chi; the index finger, water; middle finger, earth; ring finger, fire, and the little finger, air. In Mudra Vigyan, the arrangement is quite different as we shall see later.

The papillary ridges on the fingertips with its manifold patterns have intrigued man since recorded history. Many believe that the labyrinthine drawings and carvings found in caves, in ancient catacombs and tombs were marks representing the identity of its possessor, in the same way that fingerprints serve to identify us in our own era–it represented a person almost like a signature. It is assumed by some that these engravings or tracings function in an occult way making it possible for one to invoke from another plane of existence the bearer with a mark similar to the one represented in concrete form. In later periods this practice may have evolved to the use of spirit sigils and seals in ceremonial magick.

Rings are often worn on fingers to strengthen certain elements lacking in the physical, emotional, and mental bodies. Oft times we unconsciously feel a certain element wanting in our psychological and physical constitution and we seek to ameliorate this condition by stressing the importance of the finger that represents the element in question with an ornament. The degree of insufficiency is indicated by the size of the finger ornament. We have personally seen subjects wearing huge stones on almost all of their fingers. Fears and insecurities were apparent in their mien and facial expressions.

There are many so-called superstitions related to hands. According to one old belief found in European countries, is that the severed hand of a murderer may be used as a charm for gaining money and breaking entry into houses. This gruesome hand-charm is commonly known as the “Hand of Glory.” A careful preparation is required to form the charm. After removing the fluid matter from the hand, it is salted and dehydrated; the fat is likewise extracted and mixed with wax; the hand and concoction are then formed into a candle–after which it is ready for its nocturnal excursion. Supposedly, it has the power to open up locks and bolted doors. It is believed to have a hypnotic effect causing anyone to see it to be petrified–like the mythological Medusa’s head–and to consequently, obey its bearer.

Puerto Vallarta in One Day

It’s hard to imagine spending only one day in Puerto Vallarta – there is just too much to see and do in this lively resort city. It’s so much better to grow acquainted with the city over a week or two from the comfort of a luxury villa rental Puerto Vallarta. Still, if a day is all you have, here are some ideas for making the most of it.

• Walk along the Malecón. This boardwalk of sorts marks a boundary between the action on the Paseo Diaz Ordaz and the water in Banderas Bay. It’s an outdoor art gallery that features sculpture by artists from around the world. It’s a place to see and be seen – everyone walks the Malecón. And it’s a storefront for street vendors selling toys, treasures and food.
• Visit Casa Kimberly, the love nest that Richard Burton bestowed on his squeeze (and wife) Elizabeth Taylor. That little footbridge overhead made it possible for Mr. Burton to return, or retreat, to his own casa without stepping into the street. You may not be able to see inside (rumor is the place is being redone); still, you’ll get a glimpse at how the shining stars from another era spent their free time.
• Visit a few of the galleries and shops to find a take-away with a local flair. Among the most popular purchases are Mexican silver (look for the stamp “925” and “Mex” to ensure it’s authentic); hand-blown Mexican glass (bubbles and confetti make each piece special); and Mexican pottery (Mata Ortiz creations are especially popular with collectors). Galeria Vallarta at Juarez 263 is a good place to start your quest.
• Meet the iguanas on the Isla Rio Cuale. These are the original green fellows. They hang out in sunny spots and tree tops on the east end of the island. They don’t say much, so they make good companions if you’re looking for a quiet moment in the shade before you head back to the flea market at the west end of the island.

It’s a pretty good bet that once you get your feet on the ground and start enjoying the things that Puerto Vallarta has to offer, you’ll discover that one day isn’t anywhere near long enough for a visit to this city. Zacatecas, A Colonial Treasure

When one thinks of vacation, often the thought is about going to the beach.  But, what about for those of us, who are not too keen of the beach?  Well, if that’s the case why not visit Zacatecas, Mexico?  Traveling to Zacatecas is like traveling through time, for this city is one of the best well-preserved colonial cities in the world!

Zacatecas is located in the Mexican State of the same name.  To be more specific, the city of Zacatecas is located in the center-most part of the country.  It is surrounded by vast mountainous terrain including two of the world’s renowned mountains, La Sierra Madre Occidental and La Sierra Madre Oriental.  This particular city boasts of an incredible wealth in history and their yearly traditions are lessons in its culture.  It is this same richness which has earned this city the designation of a UN World Heritage Site.  The city’s name is derived from the indigenous Nahualt language, and it refers to the grasslands that are specific to the area.  The Nahualt word for grass is transliterated to “Zacalt” and evolved to the modern Spanish word “Zacate” or grass.  However, at one point this precious city was called “Zacatlan” and it was the inhabitants who were called “Zacatecas.”

The early inhabitants of this area were indigenous groups.  It was first inhabited by Caxcan and Guachichile natives.  It wasn’t until the 16th century when the Spaniards arrived and took over the land.  Zacatecas was then founded as a city in 1546, although some historians out there will argue that it was in 1548.  But it was in effect in 1546 when silver was first discovered in these lands.  The population increased in the late 1550s, which was when the huge discovery of silver was truly noted.  The silver mining business boomed, and can almost be compared to a similar historical event, the “The Gold Rush.”  The Spaniards used indigenous serfs and African slaves for the arduous and dangerous labor. Soon the silver was shipped to Europe. In fact, if it wasn’t because of Zacatecas’ silver, the Spanish Crown wouldn’t have accumulated the wealth necessary to finance future wars.  Not only this, but the silver had an overall impact in Europe’s economy.  The disbursement of the precious metal was such that by the 1600s Zacatecas was recognized as the third largest city in Mexico, or “New Spain” as it was known at the time.  Business kept thriving and the success was such that by the next century, Zacatecas’ silver ranked as the 5th largest producer of the world’s silver.   The 1800s brought about the introduction of the railroad, known as Mexico Central Railway, which in turn made the shipping of silver easier.  But this success wasn’t everlasting.  Unfortunately, that same century that brought the railroad also brought the demise of silver mining for Zacatecas.  The price of silver declined, so mines were deserted.  As a result, people began immigrating to the north and some even as far as what we now know as the state of Colorado, in the United States, to be exact.  But don’t feel too sorry, that terrible fate wasn’t eternal either.  Actually, up to this day silver mining continues to be a profitable business but never equal to what it once was.

Perhaps one of the most famous occurrences in Zacatecas took place in June of the year 1914, during the Mexican Revolution.  “La Toma de Zacatecas” (The Taking of Zacatecas) was the bloodiest and most gruesome event in the Mexican Revolution.  It was the battle led by the world-famous bandit “Pancho” Villa against the Federal Army led by then President Victoriano Huerta.  Villa’s troops, known as Los Dorados, were able to outsmart and corner the Federal Army.  This was mainly due to Villa’s intelligence and ability to use the mountainous terrain for his advantage.  In fact, Villa used a technique of deceit, making the Federal Army believe that Villa’s people would attack from a specific point.  Villa ordered the troops to be positioned the night before the battle so as to surround the Federal Army.  Villa’s troops also blocked all the city’s exits so that the Army had no other alternative than to surrender or die.  Today, three large monuments of Pancho Villa and his two main generals (all three men on horseback) stand rigid in celebration and honor of three of Mexico’s greatest protagonists.  You can find these statues at the summit of “Cerro de la Bufa,” which is exactly where this event took place.

When you visit Zacatecas you will be amazed by the quantity of places to admire.  In fact, you can ride an aerial tramway or “teleferico” in order to absorb the most magnificent aerial view of this beautifully-preserved colonial city.  A quick fact: the aerial tramway was built by a Swiss company in the late 1970s.  “El Cerro de la Bufa” is not only the platform for Pancho Villa’s monument, but just the trip through the narrow and rugged roads might take you back through time.  Having learned about Zacatecas’ mining history, you can’t leave without visiting “El Eden” which is an old mine that has been transformed into a museum and an underground nightclub.

One of the best times to visit Zacatecas is in September, for this is when Zacatecas’ National Fair (La Feria Nacional de Zacatecas) takes place.  This event is like the melting pot of cultural events.  You will have the opportunity to witness art expositions, horse races, impressive culinary creations, bullfighting, Palenque (small arena with musical guests, cockfights, equestrian shows), and even charreadas (an elaborated rodeo).  Did I mention that the weather this time of year is just in the cool 70 degrees Fahrenheit?  Another great celebration is “La Morisma,” which takes place during the last week of August.  This particular event celebrates the battles between the Christians and the Moors during Spain’s expulsion of the Moors from the Peninsula.  What’s most impressive about this celebration is that there is a live presentation of the battles; this includes actors in full medieval costumes using real weapons (with blanks of course).  They do such an amazing job at recreating this historical event; it’s like bringing history to life!  Zacatecas’ Cultural Festival (El Festival Cultural de Zacatecas) is another excellent event, but it takes place during the week of Easter.  This event is mainly dedicated to the arts including poetry, literature, music, painting, sculpting and cinema.  People from all over the world come to partake in this cultural event.  In fact, just two years ago there were participants from over 20 countries and more than 40,000 tourists attended.  This is definitely a world-wide event, for there are participants not only from Mexico but from Japan, Iran, Russia, Spain, England, and Austria, just to name a few.  On the musical stage, which by the way is free, international artists from Bob Dylan to Gloria Gaynor to Ricardo Arjona to La Oreja de Van Gogh have marveled audiences with their timeless music.

Lodging is very affordable and most hotels preserve that traditional colonial style.  Quinta Real used to be a bullfight arena and has been transformed, for your enjoyment, into a five-star hotel.  Indeed, you’ll be surrounded by the bullfight environment up to the most miniscule detail.  If you’d like to further indulge in the baroque-style then stay at Hotel Emporio.  Hotel Emporio has managed to preserve the colonial-style of the city and from here you can admire the city’s liveliness.  Lastly, Hotel La Casona de los Vitrales is an incredible place to stay.  As it is aptly named, “vitrales” means windows, the windows are brilliantly designed and decorated by a local artist.  This you have to see to believe!

Unlike most cities, Zacatecas has only three performing arts theaters: Teatro Fernando Calderon, which was finished in 1897 and is based on purely French architecture (pretty astounding if you ask me); Teatro Ramon Lopez Velarde, which is a bit more commercial, for theater companies from Mexico City often perform there to the general public; El Teatro IMSS is the third theater in the city, but unlike the other two this one is dedicated to providing entertainment mainly for children.  As far as movie theaters, there is only one in the entire city! This is called the MM Cinemas.  There used to be more movie theaters in the city but most are either abandoned or have been turned into something else.  During the Golden Age of Mexican Cinema, all these movie theaters were open, but once this era came to an end so did the movie theaters.  But why watch a movie when there’s so much to see out there including 24 museums!  For instance, the museum Pedro Coronel (which is named after Diego Rivera’s son-in-law) features international art pieces from Egypt, China, Mexico, Japan, and Africa to mention a few.  You can take your time and admire original paintings by Picasso, Dali, and Delacroix!  If you’ve ever wanted to see the world’s largest collection of masks why not visit the museum Rafael Coronel.  However, if you’re into modern art then visit the Museo de Arte Abstracto Manuel Felguerez (The Museum of Abstract Art Manuel Felgurez).  This particular museum is the most important in Latin America and features modern and abstract art by Manuel Felguerez (for whom the museum is named after), Juan Garcia Ponce, and Vlady among many others.  Native indigenous art, particularly by the Huichole tribe, can be admired up close and personal at the Museo Zacatecano.  The churches in Zacatecas are much like monuments or better yet, architectural art that has withstand the toll of time.  One church you must not miss is the city’s cathedral, La Catedral Basilica de Zacatecas, with its baroque style.  The lavish and fantastic detailing out of carved red-stone took place between 1730 and 1760.  The carved images of the Apostles are almost incredible, not to mention the tiny details!  The remains of San Mateo Correa, a martyr original of Zacatecas canonized by Pope John Paul II, can be found inside.  Unfortunately, the cathedral was looted during the religious persecutions of the early 20th century.  Nevertheless, it is an architectural marvel!  Another architectural beauty you can’t miss, and which happened to be almost right in front of the cathedral, is La Iglesia Santo Domingo de Guzman.  Like the cathedral, Church of Santo Domingo has the Spanish baroque style.  It was built between 1746 and 1749 by the Jesuits, although the Jesuits lost control of the church upon their expulsion and the followers of Santo Domingo took control (thus the name of the church).  What is most spectacular about this building is the gold wood-carved altarpieces, which are housed by three ships.  It really is an extraordinary sight!

If you’d like to take a stroll through the city, the best street is Hidalgo Avenue (Avenida Hidalgo).  This is Zacatecas’ most important and captivating street.  It literally takes you through time, for on your stroll you will encounter colonial buildings, colonial-style plazas, and even a shopping center of the same style (Mercado Gonzalez Ortega).  As a matter of fact, most of the streets in Zacatecas are stone-paved and narrow and will remind you of the streets in France; but, they’re full of life and color unlike any other streets you’ve seen.  It is not unusual to see local marching bands performing along the street on the weekends.  As far as cuisine is concern, “La Leyenda” (The Legend) is one of Zacatecas’ most famous restaurants and their specialty is a dish called “El Minero Platero” (The Silversmith Miner).  You can also visit “El Barretero” (The Miner) which features live music to accompany your traditional Mexican meal.  Zacatecas come to life at night and there is entertainment for the young and those with youthful souls.  “La Otra Espana” (The Other Spain), “Gaudi,” and “Cactus” are three of the most popular bars among the youth, but places like “Cazadores” and “El Meson de Jobito” (which used to be an old villa) have a much more traditional type of environment. Oh, and when you go out don’t forget to savor Zacatecas’ traditional drink: Mezcal, which is derived from the agave or maguey plant native of this area.  Salud!

I love my career because it allows me to work with students of all ages (from children in kindergarten to mature adults in college) and walks of life.  I have a B.A. in English from San Diego State University and have recently obtained my M.A., also in English, from National University.  During my free time I travel and write short articles for the Patawalk Virtual Tours website (www.patawalk.com).  This site takes visitors into fully mapped virtual tours in 360 formats of amazing places such as Cancun, Mexico. Sixty Seconds of Silence

Hold your tongue
Speak not ill of the dead

Pace Edwards Full Metal Jackrabbit Tonneau Cover Review

First of all, let’s start off by letting you know what a Full Metal Jackrabbit Tonneau Cover is exactly. Not everyone knows, there are a lot of people who are not familiar with this truck bed cover. This is a retractable tonneau cover also known as a roll top tonneau cover. The cover has tracks that go on each side of your pickup truck bed for the cover to travel in. It has a canister that goes at the front of your pickup box below your cabs rear window. The canister is the part of the retractable system which the tonneau cover itself retracts in and out of. This basically is how the retractable or roll top cover is designed. Different covers have some different features. I will now describe the Full Metal Jackrabbit and let you know about some of it’s features.

Pace Edwards say that their Full Metal Jackrabbit Tonneau Cover is designed and manufactured for an exact fit on each make, model and year pickup truck that they produce the cover for. They say that the design of the cover has a cleaner, sleeker look than traditional roll-up tonneau covers. Of course as with all other tonneau covers there is less wind resistance at the tailgate, improving gas mileage. The Full Metal Jackrabbit tonneau cover is constructed of all metal which is powder coated and the aluminum panels are linked together with hinges that do not collect debri. This lid rides flush along your truck,s bed rails that gives it a nice low-profile sleek look. The continuous tension spring allows smooth operation with less pulling force when closing. This cover has a “Latch ‘n Lok” system that enables you to bolt the cover at the tailgate or every 12 inches along the track of the tonneau. The canister is made of ABS making it lightweight, rustproof and dent proof.

This covers requires no drilling to install. You install it with clamps. The tonneau is made in the USA and backed by a 3 year warranty.

Some of the advantages of this tonneau cover would be the fuel savings by allowing the wind to pass over your tailgate rather than smacking into it causing a drag and an increase in gas consumption. The cover also protects your cargo from the high winds caused by driving and protects your cargo from the weather. It deters thieves with it’s locking system as well as keeping your cargo out of sight, out of mind. It adds a great look to your pickup truck. And I have to mention the 3 year warranty which is a real plus compared other retractable tonneau covers. Another great advantage that comes to mind is being able to get at your truck bed quickly and easily, not by just lifting the cover up but by retracting ahead, completely out your way. Some of the disadvantages that I got from customer reviews would be maybe a slight sag in the cover. Instructions that are with it may be a little vague but can be managed with a little common sense. The price tag is a little high.

All in all the Full Metal Jackrabbit Tonneau Cover is a very nice looking retractable truck bed cover. I think this cover will protect your cargo as well as any roll top pickup covers and better than most. I hope this little article will help you decide if this tonneau cover is for you.
