<p>One of the main differences between authentic Mexican and Mexican-American is that Mexican-American uses more ground beef and cheddar or yellow cheese than does authentic Mexican. In Mexico, boiled and shredded beef and other meats, as well as white asadero cheese is used. Another main difference between authentic Mexican and Mexican-American is the way enchiladas are prepared. In the US, tortillas are covered with enchilada sauce and filled with large quantities of ground beef and cheese, then placed in the oven for baking. In Mexico, tortillas are dipped in enchilada sauce then fried in oil and filled with a small amount of meat and cheese for a garnish.</p>
<p>Tex-Mex is often referred to as dishes using large amounts of beef and cheese along with a gravy style enchilada sauce. Puffy tacos are something you won&rsquo;t find anywhere else in the US or Mexico and Texas style salsa is made with jalapeno chilies, whereas Mexican salsa is made with tomatoes, tomatillos and other types of chili.</p>
<p>New Mexico and Arizona also add their style of cooking to the broad term Mexican-American. New Mexican&rsquo;s incorporated many of their dishes with the Pueblo Indians and the Spaniards. Treats like sopaipillas are unique to New Mexico. Sopaipillas are deep fried flour tortillas filled with honey or sometimes seasoned meat. New Mexico also uses its own style chili sauces made from chilies grown in their state. Arizona brought us popular Mexican-American dishes like burritos and chimichangas which were not found in other areas until recently.</p>
<p>It&rsquo;s interesting to note that the most popular Mexican food in the US, such as tacos, enchiladas and tamales, are staples and regarded as a snack or light meal in Mexico. They are as hamburgers and hot dogs are to people in the US.</p>
<p><strong>Low fat, Low Calorie Mexican Dishes</strong></p>
<p>Fat and fatty recipes were introduced into Mexico when the Spaniards brought over oil and other fatty foods. Many authentic Mexican recipes use little cheese, small amounts of meat, if any, and many of their sauces are made from tomatillos and tomatoes. Mexicans are also famous for their seafood recipes, many of which are also low fat.&nbsp; Many of the dishes you see in &ldquo;Mexican&rdquo; restaurants are variations of authentic Mexican cooking adjusted and adapted to meet a more American style of taste. So, if you happen to come across a truly authentic Mexican restaurant, you might be surprised at the size of the entr&eacute;e and the fact that it doesn&rsquo;t contain a large amount of meat or cheese. </p>

<p>Get a couple of the plastic drawer  organizers with wheels.  You can put the different items in seperate drawers.  Yarn in a big bottom drawer, your clay in another.  You get the idea.  These are on wheels so you can push them anywhere  when you want to work AND you can get a table cloth (or piece of fabric) that is large enough to cover them when they&#8217;re together and you have what appears to be a side table.</p>
<p>An oil painting support is any surface that oil paint can be applied to. There are a variety of different surfaces that artists use to paint on. Everything from certain woods, canvas, and even metals can serve as supports for oil paint. This article will introduce you to those various supports and hopefully help you decide which support is best for your style of oil painting.</p>
<p>LINEN</p>
<p>Linen is made from the fibers of the flax plant. The plants are harvested and then left to soak in water until the outside of the plant rots away leaving the fibers underneath. The fibers are then processed into yarns or threads which are then woven into canvas. The fibers of the flax plant are long and quite strong and make for a very interesting and durable painting support. Paintings executed on this surface have withstood the test of time. It is for this reason that linen canvas is a favorite amongst professional oil painters. Unfortunately linen canvas is rather expensive and may not be the best option for beginners. If you are interested in learning more about linen canvas, check your local art store or go online and do a search. There are a variety of different linen canvases available, from rolled canvas to pre-stretched. It comes primed for acrylic and oils, or you can get it unprimed as well.</p>
<p>COTTON</p>
<p>Cotton canvas is the most popular support for beginner oil painters. It is a relatively strong material and much cheaper than linen. It has a very even and mechanical weave. There is a big debate going on in the art world over which is the better painting support, linen or canvas? What support will last longer? This is really a matter of personal opinion and taste. I know many artists, including myself, who use cotton canvas exclusively. Other artists swear by linen. If the surface is sized correctly, then your painting will be well protected from rot and will last a long time. So when deciding between linen or cotton, I feel your decision should be based on how you enjoy working with the material itself and not whether or not it will be around in three hundred years. If you are really concerned about the durability of cotton, then purchase a heavy grade cotton canvas and try stretching it yourself. Cotton canvas is available in rolls or pre-stretched, primed or unprimed.</p>
<p>CANVAS PADS</p>
<p>For those artists who may be on a tight budget but still want a descent quality surface to paint on, then canvas pads are a good choice. Canvas pads come in a variety of different sizes and are great for beginners who are just starting out. Canvas pads are great for practice or doing studies. Make certain you get a heavy weight canvas pad suitable to hold oil paint.</p>
<p>MASONITE OR HARDBOARD</p>
<p>Masonite is another popular oil painting support for artists. Masonite is actually a trademarked name for a synthetic hardboard made from wood particles. Hardboard is inexpensive and rigid. If you plan to use large hardboards, it is recommended that you reinforce them with a frame, as they can bow or bend. You can purchase plain hardboards or other varieties like canvas boards, which are hardboards covered with a ready to paint canvas material.</p>
<p>WOOD PANELS</p>
<p>The earliest known oil paintings were created on wood panels made of oak or poplar. The wood was covered with a uniform ground made of animal skin glue and chalk. The ground was then polished smooth to create a surface suitable for oil paint.</p>
<p>Pure hard wood panels are not the most popular ground for oil painters today. They are costly and rather difficult to lug around. A good alternative that oil painters use is plywood. There is good quality plywood available made of birch, poplar or mahogany that is suitable for oil paints if prepared correctly. Do not paint on soft woods such as pine because they contain more resins and do not resist moisture very well.</p>
<p>The above are the more popular oil painting supports in use today. There are others that artists use when they are feeling adventurous. Metals like copper and aluminum are sometimes used as a painting support. Obviously metals are quite heavy, so paintings on this type of support are usually on the smaller side. There are also other fabrics used in oil painting like jute, which is a strong natural fiber with a rough texture.</p>
<p>Your choice of oil painting support really depends on your style of painting. Experiment with the variety of painting supports available and have fun. You will eventually find one that works best for you.</p>

<p>If you go to an art supply or high-end craft store, you  can buy a paint that you bake on after you&#8217;re done painting it on. We use it with wine glasses, but it works just as well on ceramics and porcelain. The only caveat is that you&#8217;ll need to wash the  dishes by hand, not in the dishwasher. The powerheads in the dishwasher will wear away at the ceramic paint.</p>
<p>Indian pottery, like that made by Tarahumara and Tigua Indians, is hand made using rough white, orange and brown clay found in the earth. The earthen clay is not only very durable but is also what gives the pottery that popular rustic look. </p>

<p>Much like the fun-filled traditions associated with Halloween in the United States, Mexico embraces the somber autumn holiday with a variety of celebrations and activities. Known throughout Latin America as El Dia de los Muertos (Day of the Dead), Cancun offers visitors a truly unique version on this popular holiday, with many events incorporating both Mayan customs and modern Mexican traditions. Beginning on October 31 with celebrations for the returned souls of the departed, the party continues each year until November 2.</p>
<p>As Cancun is in the center of the historic region known as the Mayan Riviera, many of the city&#8217;s events incorporate Hanal Pixan &#8211; the Mayan ritual of the dead. Both in Cancun and at most of the Mayan sites outside the city, candlelight prayer services are held on October 31 to commemorate the deceased. After this period of reflection, Hanal Pixan quickly transforms into a friendly meal shared by hundreds. Tamales are often baked in an underground pit and served to both the living and the dead, as it is believed that the deceased absorb the essence of the food placed at their graves. Handmade wines and candies are also passed around for all to enjoy, but Hanal Pixan marks only the beginning of this amazing holiday.</p>
<p>October 31 is also marks the beginning of a three day culinary feast in Cancun, taking place both in the streets and all the best restaurants. At the city&#8217;s gastronomy festival, visitors can sample local delicacies and gourmet international cuisine prepared by Mexico&#8217;s best chefs. Held outdoors along the Caribbean waterfront, this festival is anything but a sober Day of the Dead ritual, as guests are invited to eat and drink as much as they like. If you dine in any of Cancun&#8217;s restaurants throughout the three day holiday, you will be treated special local recipes reserved for Day of the Dead. At night, many visitors move from the restaurants to the bars and dance clubs where special events such as costume parties have become the norm.</p>
<p>One of the most fascinating traditions associated with the Day of the Dead is the creation of colorful altars &#8211; known in Mexico as ofrendas &#8211; to honor deceased loved ones. Anywhere you travel in the city, you will pass numerous altars containing all kinds of offerings. Set on tables with white cloth, the altars of Cancun display everything from fresh flowers and chocolate skulls to wooden crosses, personal mementos and photographs. Though the tradition of honoring the deceased might seem solemn, the positive atmosphere of the holiday extends to these personalized displays, as awards are handed out for the most elaborate and beautifully decorated altars.</p>
<p>The newest Day of the Dead activity for Cancun&#8217;s visitors takes place south of the city in the Xcaret Nature and Cultural Park. Last year, the park unveiled The Bridge to Paradise &#8211; one of the world&#8217;s most unique cemeteries. Composed of 365 lavish gravesites created by local artists, The Bridge to Paradise serves as a creative representation of Mexican history and culture. For instance, a colorful sculpture of a bed complete with linens references the country&#8217;s dreamlike mythology, while a miniature replica of a cathedral reminds visitors of Mexico&#8217;s religious culture. During the celebrations surrounding the Day of the Dead, visitors are served candies and other refreshments from altars set up throughout the cemetery. Much like the celebrations in Cancun, the events at Xcaret and its cemetery rejoice in life and the cultural traditions of Mexico on this seemingly dark day.</p>
<p>Much like the American tradition of Halloween, children are encouraged to don costumes and trick-or-treat during the celebrations of Day of the Dead. However, Mexican myth and tradition contribute some interesting items to the children&#8217;s experience. As most trick-or-treating takes place of November 2 &#8211; the day when, as myth has it, spirits must leave the homes of their loved ones and return to the other side &#8211; all children wear bracelets of red string to ward off the more nefarious spirits traveling to the underworld. As with all the other events surrounding Day of the Dead, visitors are encouraged to participate in the local traditions.</p>
<p>Furthermore, as the holiday takes place just weeks before the beginning of the peak travel season, Day of the Dead may be one of the best times to visit Cancun. Many airlines and resorts will feature special rates during this week, making travel to this luxurious destination affordable for any family.</p>
<p>Though Day of the Dead is celebrated throughout Latin America, few destinations observe the holiday as colorfully as Cancun.
